 Recipe: Wagyu Filet with Red Wine Shallot Butter

 Ingredients (Serves 2–4)

  • 2–4 Australian Wagyu filets (available fresh at Crofton’s)
  • Kosher salt & freshly cracked pepper
  • 2 tbsp olive oil or clarified butter
  • 1 stick unsalted butter
  • 2 shallots, finely diced
  • 1/2 cup dry red wine
  • 1 tsp fresh rosemary, chopped
  • Optional: microgreens or fresh herbs for garnish

🔥 Instructions

  1. Let steaks sit at room temperature for 30 minutes. Pat dry and season generously.
  2. Heat oil in a skillet over high heat. Sear steaks 3–4 minutes per side (adjust for thickness).
  3. Transfer steaks to a plate and let rest.
  4. In the same pan, reduce heat to medium. Add shallots and cook until softened.
  5. Deglaze with red wine and scrape up any bits from the pan.
  6. Stir in butter and rosemary until a silky sauce forms.
