Ingredients (Serves 2–3)
From Crofton’s:
- 2 (10–12 oz) New York strip steaks
- ½ lb sea scallops (dry packed, not soaked)
- Crofton’s Rib Rub or steak seasoning
- Paprika or seafood seasoning
Pantry Staples:
- 2 tbsp olive oil
- 3 tbsp butter
- 1 garlic clove, smashed
- Zest & juice of ½ lemon
- Fresh parsley, chopped
- Salt and pepper
🔥 Directions
1. Sear the Steak
- Bring steaks to room temperature.
- Season generously with Crofton’s Rib Rub.
- In a cast iron skillet, heat 1 tbsp oil over high heat.
- Sear steaks 3–4 minutes per side (or to desired doneness).
- In the final minute, add 1 tbsp butter and the smashed garlic. Baste.
- Rest steaks under foil for 5–10 minutes.
2. Sear the Scallops
- Pat scallops very dry (moisture prevents a good sear).
- Season lightly with salt, pepper, and paprika.
- In a separate pan, heat 1 tbsp oil and 1 tbsp butter over high heat.
- Sear scallops 1½–2 minutes per side, until golden and just opaque.
- Squeeze lemon juice and zest over scallops. Garnish with parsley.
3. Serve & Enjoy
Plate steak with scallops on the side (or stacked on top), drizzle with lemon herb butter, and serve with mashed potatoes, asparagus, or a grilled corn salad.
