Ingredients (Serves 2–3)

From Crofton’s:

  • 2 (10–12 oz) New York strip steaks
  • ½ lb sea scallops (dry packed, not soaked)
  • Crofton’s Rib Rub or steak seasoning
  • Paprika or seafood seasoning

Pantry Staples:

  • 2 tbsp olive oil
  • 3 tbsp butter
  • 1 garlic clove, smashed
  • Zest & juice of ½ lemon
  • Fresh parsley, chopped
  • Salt and pepper

🔥 Directions

1. Sear the Steak

  • Bring steaks to room temperature.
  • Season generously with Crofton’s Rib Rub.
  • In a cast iron skillet, heat 1 tbsp oil over high heat.
  • Sear steaks 3–4 minutes per side (or to desired doneness).
  • In the final minute, add 1 tbsp butter and the smashed garlic. Baste.
  • Rest steaks under foil for 5–10 minutes.

2. Sear the Scallops

  • Pat scallops very dry (moisture prevents a good sear).
  • Season lightly with salt, pepper, and paprika.
  • In a separate pan, heat 1 tbsp oil and 1 tbsp butter over high heat.
  • Sear scallops 1½–2 minutes per side, until golden and just opaque.
  • Squeeze lemon juice and zest over scallops. Garnish with parsley.

3. Serve & Enjoy

Plate steak with scallops on the side (or stacked on top), drizzle with lemon herb butter, and serve with mashed potatoes, asparagus, or a grilled corn salad.
